Chipotle Cheese Crisps

These savory cheese crisps are of the can't-stop-eating-them kind. They're made with our Rooster's Chipotle™ Seasoning combined with cheddar cheese and stone ground corn meal. Wonderful as a snack by themselves. Or add a schmear of cream cheese and offer as canapés to guests. Whatever, better hide a few if you want any for yourself!

Makes about 60 crisps
  (requires at least 4 hours refrigeration time, so plan ahead)


  • 1 1/4 cup flour
  • 1/2 cup stone ground corn meal
  • 1/2 tsp baking soda
  • 2 tbl Rooster's Chipotle™ Seasoning
      (or other favorite savory seasoning blend you have on hand)
  • 1 tsp kosher salt
  • 10 tbl butter (cold)
  • 1/2 lb grated cheddar cheese (sharp or mild as you like)
  • appx 3 tbl water


  • Combine dry ingredients in bowl and mix well
  • Cut in butter and cheese with pastry blender until mixture is uniform and grainy
    (like making pie dough)
  • Add just enough water to form a smooth dough ball
  • Divide into four pieces and roll into balls, then into logs about 1 1/4" diameter
  • Wrap in plastic wrap and refrigerate at least 4 hours


  • Preheat oven to 400°
  • With a sharp knife, really sharp, cut logs into slices no more than 1/8" thick
  • Place slices on parchment paper on cookie sheet; space about 1" apart
  • Bake 8-10 minutes until golden brown (check at 8 min, then add more time, if needed)
  • Slide crisps off of parchment paper onto cooling rack
  • Cool and store in air-tight container until served
